Apple Coconut Cake

Combine flour, baking soda and salt. Mix well. Set aside. Combine oil, eggs, sugar and vanilla. Beat at medium speed of electric mixer for 2 minutes. Add flour mixture. Mix at low speed just until blended. Fold in pecans, apples and coconut. (Batter will be stiff.) Spoon into a greased and floured 10-inch tube pan. Bake at 350\u00b0 for 1 hour and 20 minutes or until cake tests done. Cool cake about 30 minutes. Remove from pan and immediately drizzle glaze over cake. Yield: one 10-inch cake. Will serve about 20, as it is quite rich.

Add 1 egg at a time, beating after each.
Mix flour, baking powder and salt together.
Add alternately with milk.
Continue beating at medium speed, scraping sides of bowl with a rubber spatula or wooden spoon.
Add vanilla. Bake in 11 x 7-inch pans (3) for 35 minutes at 350\u00b0.
Let cake cool.

Coconut Pineapple Upside-Down Cake

Strain pineapple slices in a bowl and use juice in the cake mix.
In a mixing bowl, put cake mix, eggs, oil and 1 cup pineapple juice.
Mix well for 3 minutes with hand blender.
Blend mix on low speed until blended together, then on high speed for 3 minutes.
Spray a 13 x 9-inch pan.
Place pineapple on bottom. Sprinkle 1 cup brown sugar over pineapple.
Pour coconut cake mix over pineapple and brown sugar.
Bake 30 to 40 minutes at 350\u00b0 or until done.
