Peel and slice potatoes.
Pack in clean canning pint or quart jars.
Add 1/2 teaspoon salt to each quart of potatoes.
Pour boiling water to fill each jar; seal.
Place in hot water bath for 20 minutes.
Toss the quartered potatoes with the seasoning salt and olive oil.
Place in a grill basket and grill over medium-high heat for about 20 minutes, or until potatoes are soft. Toss often to prevent burning.
Once soft, mash the potatoes with a potato masher and mix in butter and milk or sour cream. Top with chopped chives or other mashed potato mix-ins of your choice.
Serve Grilled Mashed Potatoes Recipe with your favorite grilled meat and/or veggies.
Just cook -- Nothing more. In a medium saute pan saute the butter and olive oil too to get the potatoes nice and brown. I like to pan saute just until lightly brown, they should take 5-8 minutes on medium high. The last minute I add the garlic, seasoning and any other OPTIONS (roasted peppers, pimento, sauteed bacon or scallions) if you desire. You can also add extra butter at this point if you want really buttery potatoes with a little sauce.

Combine sweet potatoes, 3/4 stick softened butter, sugar, nutmeg, cinnamon, eggs and evaporated milk.
Pour into buttered casserole dish.
Bake for 20 minutes. While souffle is baking, melt 1/2 stick butter; stir in cornflakes, brown sugar and nuts.
Spread on top of souffle. Cover with miniature marshmallows and continue baking until set. If canned potatoes are used, use only 1/2 cup milk.
Makes 4 to 6 servings.

FRESH BEET RECIPE:
Preheat oven to 450\u00b0F Remove beet greens from 3 fresh beets; rinse beets and wrap tightly in foil. Bake for 40-50 minutes or until tender when pierced with a fork. Unwrap foil and remove skin by rubbing firmly with paper towels. Refrigerate beets until cool; cut into pieces and add to salad.

Microwave the potatoes or use leftover baked potatoes (Recipe #280220) and set aside until

Melt the butter in a small frying pan.
Add the spices to the butter and stir.
Drain the liquid from the canned potatoes and add the potatoes to the pan.
Stir with a wooden spoon to coat all the sides of the potatoes.
Cook on medium heat for 5 to 7 minutes.
Note: Adding the spices to the butter ensures that all the potatoes are evenly coated.
Start the water, salt and sugar to a boil while prepping the potatoes.
Add the potatoes as soon as they're prepped, cover and let cook until nearly done. (Actual time will vary based on the size and density of the potatoes. The tiny potatoes took only about 20 minutes, others longer.)
Add the beans, return to a boil and cook for about 7 minutes or until the beans are well-cooked but still bright green.
Drain.
Return to the hot pot and toss with garlic and butter. Add salt if needed.

Canned potatoes are already cooked, so you really are just heating them up. They don't like to brown easily - but it can be done with some patience -- just cook them a little longer and add a little more butter. ;-).
Sometimes we add 2-3 beaten eggs on top and let it cook until set. The worlds easiest potato omelet! Or add in some onions and bacon -- yum!

Pour the large can or jar of sauerkraut, with juice, on one side of crock pot.
Drain 2 cans of potatoes and put on other side of crockpot.
Pour the other can of potatoes with juice inches.
Cut up meat into small chunks and put on top.
This must go for 10 hours on low (at the least) for the flavor of the meat to get to potatoes.
I substitute large can of sauerkraut with my own homemade and substitute the potatoes with one quart jar of my canned potatoes with a little of juice.
If using fresh potatoes, cook in large saucepan, covered, in boiling salted water about 15 minutes.
Drain; set aside.
If using canned potatoes, drain and set aside.
Spread pie filling in 9 x 9 x 2-inch baking dish.
Arrange potatoes on top of apples. In small mixing bowl, stir together cranberry sauce and apricot preserves.
Spoon over sweet potatoes.
Bake, uncovered, in 350\u00b0 oven for 20 to 25 minutes, or until heated through.
Makes 6 to 8 servings.
Place the sweet potatoes in a pot and cover with cold water. Bring the potatoes to a boil over high heat. Reduce the heat and simmer about 20 to 30 minutes, until the potatoes are done. Check by piercing with a fork; there should be no resistance. Drain well.
Mash the sweet potatoes with a potato masher or fork, or use a food mill.
Add the lime juice and stir well. Add the milk and stir. Add Cajun seasoning, to taste.
Mash the potatoes until the lumps are gone and place the mixture into a 9 x 13-inch greased dish.
