In a food processor, pulse watercress until finely chopped. Add butter and lemon juice. Season then puree until evenly combined. Transfer to a sheet of plastic wrap and shape into a log, about 1 1/4 inch wide. Roll up in plastic wrap and chill for at least 1 hour, until firm.
Cut into thin slices and serve with whole wheat bread.

Add ingredients to bread machine in the order given, or according to your machine instructions.
Set on whole wheat or basic cycle. On my very old Black and Decker machine I use the powdered milk/wheat setting.
This is a high rising whole wheat bread, and the large recipe usually squashes at the top of my machine. I can give small and medium versions if you send a private message.
Scald milk.
Add shortening, sugar and salt and stir until dissolved.
Add whole wheat flour and beat rapidly with spoon. Add dissolved yeast and cold water.
Mix well, then add enough white flour to make a nice soft dough.
Let rise until double, then punch down and rise again.
Shape into 3 loaves.
Let rise and bake.

Put the ingredients into the bread machine pan in the order
Place all dry ingredients in bread pan (except dry yeast).
Place ingredients following your Bread machine's instructions.
When it is kneading;check to see if you need more flour or water.
Set to Whole Wheat setting.

Place all the ingredients in a bread machine with a 2 lb loaf capacity.
Put the ingredients into the pan more-or-less in the order given- wet ingredients first, yeast last.
This will allow you to use a timer if desired.
Use the whole wheat setting on the bread machine to bake the bread.
