Mix the Open Pit Barbeque Sauce and brown sugar together.
Drain waterchestnuts. Wrap each chestnut with 1/2 slice of bacon. Secure with a tootpick and marinate in BBQ sauce and brown sugar mixture.
Bake on a cookie sheet with foil on it and lightly greased. Bake one hour at 350. Remove all grease and bake 1/2 hour longer.

Rub 3 racks or of ribs with the rub mixture.
Place in a large covered roaster on rack so you can put an inch or two of water in the roaster without touching the ribs.
Back at 350 degrees for 1-1/2 hours.
Combine BBQ sauce ingredients, and slather on the baked ribs. Place ribs on BBQ grill or in a stove top smoker for 10 mins or until sauce is set or slightly charred.
Dice the bacon and onion and cook in a skillet untillbacon is rendered and onions are translucent. Add all other ingredients in a disposable foil pan or if you don't have a disposable foil pan handy, just wrap the outside of a Pyrex casserole dish with aluminum foil. This prevents smoke from building up on the dish and makes cleanup a breeze. Heat in the pit or smoker at 250 degrees for an hour.
