Put olive oil in a pan, heat.
Add finely chopped shallots, let them become glassy but beware: do not let burn!

Combine flour, garlic salt and pepper.
In separate dish, beat egg and water together.
Dip pollock in seasoned flour, then egg mixture, then in seasoned flour again.

Pollock Montreal

Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with butter flavored cooking spray.
Season the pollock fillets with paprika and black pepper. Place on baking sheet and layer with onion, green pepper, and tomato slices.
Bake in preheated oven until fish has cooked and flakes easily, about 15 minutes. Turn oven off, place two slices of cheese on each fillet. Return fish to the oven and allow cheese to melt, about 3 minutes.

Season both sides of the Alaskan halibut with the seafood seasoning. Heat a large skillet on high heat and add the oil. Cook the first seven ingredients until very thick.
Fold in the 2 cups fresh or frozen blueberries and pour into a baked pie shell.

Parmesan Crusted Baked Halibut

Heat oven to 475\u00b0 and brush a baking sheet with oil. In a small bowl, lightly beat egg and milk together. In a separate bowl, stir together parmesan cheese, flour, paprika, pepper and salt. Dip fish fillets in egg wash, and then dredge in flour mixture. Lay fish fillets in a single layer on prepared baking sheet. Top with dabs of butter and bake for 8-10 minutes, or until crispy and baked through.

Alaskan Amber Salmon Marinade

Mix all of the ingredients, except the salmon, in a bowl to make the marinade.
Place the fish fillets in a freezer bag, add the marinade, squeeze all the air out of the bag and seal the bag. Allow the fillets to marinate for 12 to 24 hours.
Heat up your grill and over indirect heat grill the fillets, skin side down.
Cook until the fish flakes at the thickest parts of the fillet. You can test this by using a fork and lightly brushing it over the area.
The Plate : Serve with roasted red bell peppers and cold Alaskan Amber Beer.

Alaskan Beer Quick Bread

Mix together in a bowl, the flour, sugar, baking powder, baking soda and salt.
Add 12 ounces Alaskan Amber Beer*.
Mix until evenly moistened.
Bake in oiled loaf pan at 400\u00b0F for about 45 minutes.
Invert onto rack and remove pan.
Serve with butter& honey.
*You could probably substitute any brand of\"Amber\" beer in this recipe.

Baked Potato Skins

Slice baked potatoes in half lengthwise.
Scoop out about 3/4 of flesh and set aside for other recipes.
Set skins on cookie sheet and place in oven about 4 inches away from top element. Broil 8 minutes.
Remove skins from oven and sprinkle with cheese. Season well and add bacon and paprika.
Broil another 4 to 5 minutes.
Serve hot with sour cream, if desired.

Cut tops from each potato. Scoop out flesh, leaving a 1/2 inch layer around edges. Fill with baked beans and top with cheese. Microwave on high for 1 min 30 seconds, until cheese starts to melt. Top with basil and serve.

Boston Baked Bean Sandwiches

Heat baked beans until hot. Season as needed.
Lightly butter each slice of Boston brown bread on one side.
Cover each slice generously with hot baked beans and a 2 slice layer of Jarlsberg on the buttered side of the bread.
Top with ham slice and put under a broiler until cheese melts.

Mediterranean Topped Baked Potatoes

Combine first 6 ingredients and mix well.
Cut or pierce tops of baked potatoes lengthwise; squeeze ends and push toward center to open.
Top each with one-fourth of yogurt mixture.
Serve at once.
