Baked Potatoes With Baked Beans - cooking recipe

4 large baking potatoes, scrubbed
1/4 cup finely chopped salami or pepperoni
1/4 cup grated Cheddar cheese
2 tsp snipped fresh chives
1 can (8 oz) baked beans
Preparation

Preheat the oven to 350\u00b0F. Line a baking pan with parchment paper.
Pierce potatoes in several places with a skewer. Arrange on turntable of microwave. Cook on high for 12-14 mins, until tender.
Meanwhile, in a small bowl, combine salami, cheese and chives. Cut a small slice off bottom of each potato to allow them to sit flat. Using a teaspoon, scoop out about 1/2 inch of potato center.
Chop excess potato and mix with salami mixture. Place potatoes on prepared pan. Spoon an even amount of baked beans into each potato. Divide salami mixture between potatoes.
Bake for 10-15 mins, until topping is crispy.
