Orange Lentil Soup(Adapted From The Vegetarian Epicure By Anna Thomas)

Saute onion and garlic in butter in soup pot until translucent.
Add grated carrots and stir for 1 minute.
Add lentils, water, chicken or vegetable cube (if used) and lemon rind.
Let soup come to a boil, then lower the heat and simmer for 40 minutes.
Add lemon juice and basil; simmer for another 20 minutes.
Add salt and pepper to taste.

Anna'S Lactose-Free Supreme Personal Pizzas

In a small frying pan, heat olive oil over a medium-high heat. Saute peppers, onions, mushrooms, snd minced garlic till slightly cooked. Season chicken with salt, pepper, and garlic powder- add to pan and saute with vegetable mixture until chicken is cooked and slightly browned. Remove from heat.
Split pitas in half. Spoon on about 1 tablespoons of sauce onto each half. Spread over pita. Sprinkle cheese on top. Spoon some of the supreme mixture on top of cheese, and sprinkle a little of the red pepper flakes on top, if desired.

Southwestern Grilled Cheese

Butter one side of each bread slice.
Dust buttered sides with seasonings to taste.
Build sandwich in this order: cheese, tomatoes, onions, olives, remaining slice of bread buttered side out.
Grill over low to medium low heat until bread gets golden brown and cheese starts to melt.
Carefully flip sandwich and brown other side.
Let sit for a few moments before cutting.
Eat and enjoy!
Do try to find the Thomas' corn bread if you like corn bread; it is slightly sweet and crumbly like regular corn bread and oh is it good!

Mile-High Apple Pie

Roll one-half the pastry on floured surface into circle 1-inch larger than inverted pie pan.
Ease pastry into pan.
Combine cornstarch, Equal for Recipes, cinnamon, nutmeg and salt; sprinkle over apples in large bowl and toss.
Arrange apples in pie crust. Roll remaining pastry into circle large enough to fit top of pie. Place on top of pie; seal edges, trim and flute.
Slash top crust in pattern of your choice.
