My Sweet Potato Souffle(My Favorite Sweet Potato Recipe!)

Preheat oven to 350\u00b0.
Combine sweet potatoes, 3/4 stick softened butter, sugar, nutmeg, cinnamon, eggs and evaporated milk.
Pour into buttered casserole dish.
Bake for 20 minutes. While souffle is baking, melt 1/2 stick butter; stir in cornflakes, brown sugar and nuts.
Spread on top of souffle. Cover with miniature marshmallows and continue baking until set. If canned potatoes are used, use only 1/2 cup milk.
Makes 4 to 6 servings.

My Favorite Sweet Potato Recipe

Cook potatoes in a large saucepan in
enough salt water to cover.
Cook about 15 minutes or until
tender.
Drain
and set aside.
Spread pie filling in an 8\tx

2-inch baking dish. Arrange cooked potatoes on top.
In a small mixing bowl stir together cranberry sauce, apricot
preserves
and
orange marmalade.\tSpoon over sweet potatoes.
Bake uncovered at 350\u00b0 for 20 to 25 minutes.

Cajun-Spiced Mashed Sweet Potatoes Recipe

Place the sweet potatoes in a pot and cover with cold water. Bring the potatoes to a boil over high heat. Reduce the heat and simmer about 20 to 30 minutes, until the potatoes are done. Check by piercing with a fork; there should be no resistance. Drain well.
Mash the sweet potatoes with a potato masher or fork, or use a food mill.
Add the lime juice and stir well. Add the milk and stir. Add Cajun seasoning, to taste.

Cook potatoes; drain and mash while still warm.
Add balance of ingredients (except marshmallows), as listed, stirring well after each addition.
Grease an ovenproof casserole; add mashed sweet potatoes.
Top with miniature marshmallows, just to cover top of the potato mixture.
Bake at 325\u00b0 for 45 minutes.

Bologna Wedges

Mix the milk, cream cheese, horseradish and mayonnaise together.
Layer your bologna as follows; 1 slice of bologna-spread with cheese mixture then 1 slice of bologna.
Keeping this up until the cream cheese mixture is all used up ending with a slice of bologna.
Wrap with waxed paper and refrigerate until well chilled.
Cut in small wedge shapes and serve.

Ham (Bologna) Salad

Cut the bologna into 1/8's.
Put into pan; add water.
Boil for 15 minutes.
Cool.
Put in fridge until cold.
Put bologna through food grinder; also onion.
Mix bologna, onion and sweet pickle relish with mayo.
If it tastes sour, add package of sweetener.

Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
Grind the bologna and eggs in a meat grinder with a medium blade.
In a large bowl, mix the bologna mixture with desired amount of creamy salad dressing and desired amount of sweet pickle relish. Refrigerate 2 to 3 hours, or until chilled.

Add Miracle whip to taste.

Bologna Salad

Chop or dice bologna.
Add finely chopped celery, minced onion, pepper, sweet pickles, croutons and boiled eggs.
Add potato chips, mustard and salad dressing; mix well.
Chill.
Serve on lettuce.

Hillbilly Cheeseburger (Fried Bologna)

Fry bologna until lightly browned; cover with a slice of hot pepper cheese and heat until melted. Serve on a toasted bun with the raw onion and candied pickle slices. This is a hillbilly cheeseburger extraordinare!

Fried Bologna

Score the edges of the bologna all around so it doesn't curl up as it cooks.
Melt the butter in a skillet and fry the bologna until crisp on the outside, but still juicy inside.
As the bologna cooks, prepare the roll. Lay cheese on the bottom, if desired, and dress the top with mayonnaise or mustard to taste.
Pile the hot bologna straight from the skillet into the roll atop the cheese so its heat will soften and melt the cheese. Add condiments if desired.
