Stir in the sugar and cook for about 1 minute,or until completely dissolved.
Add the hibiscus flowers and remove from heat.Let it steep for about 1 hour at room temperature.
Strain and chill or serve over ice.

Shrimp Fajitas With Guacamole And Pico De Gallo

In medium bowl, place shrimp, cilantro, garlic, jalapeno and olive oil.
Marinate 2 to 8 hours.
In large, heavy skillet, place 2 tablespoons of oil from marinade and heat on high until hot.

Hibiscus Tea

Combine water and ginger in a large pot and bring to a boil over high heat.
Remove from heat and stir in Jamaica flowers and sugar until sugar is dissolved. Let steep 10 minutes.
Strain through a chinois 'china cap' or fine mesh sieve into a large, heat-resistant bowl or pot. Stir in lime juice and set aside to cool. Refrigerate until ready to use.
Serve over ice.
