Shrimp Fajitas With Guacamole And Pico De Gallo - cooking recipe

Ingredients
    2 lb. shrimp (medium), peeled and deveined
    1 bunch fresh cilantro (tough stems removed)
    3 cloves garlic, chopped
    4 jalapeno peppers, seeded and chopped
    1 c. olive oil
    2 red bell peppers, seeded and cut into thin strips
    2 green bell peppers, seeded and cut into thin strips
    4 medium yellow onions (each cut into 6 wedges)
    8 flour tortillas, heated
    Guacamole (recipe follows)
    Pico de Gallo (recipe follows)
Preparation
    In medium bowl, place shrimp, cilantro, garlic, jalapeno and olive oil.
    Marinate 2 to 8 hours.
    In large, heavy skillet, place 2 tablespoons of oil from marinade and heat on high until hot.
    Add red and green peppers and onions and saute 3 to 4 minutes.
    Remove shrimp from marinade and add to skillet.
    Saute 2 minutes or until done.
    Serve shrimp and vegetables with tortillas, Guacamole and Pico de Gallo.
