Goat Cheese Quesadilla - cooking recipe
Ingredients

2 c. Pico De Gallo (recipe follows)
1 c. Guacamole (recipe follows)
1/2 lb. soft goat cheese (such as Montrachet)
2 tsp. minced shallots
1/2 tsp. minced garlic
1 Tbsp. chopped fresh cilantro
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/2 tsp. salt
1/2 tsp. white pepper
1 Tbsp. olive oil
4 tsp. unsalted butter, softened
8 small (6-inch) corn tortillas (recipe follows)
Preparation

Prepare the Pico De Gallo and set aside.
Prepare the Guacamole; cover tightly with plastic wrap and set aside.
