Diet Milk Shake

Put all ingredients into blender; blend until slushy.
Makes 1 serving.

One Serving Cheese Puff

Cut bread into strips, place with buttered side down along the sides and on the bottom of 10-ounce custard cups.
In a bowl, lightly beat the egg; add milk, cheese, onion salt, salt and hot pepper sauce.
Pour into custard cup.
Place on a baking sheet. Bake at 350\u00b0 for 35 to 40 minutes or until puffy and golden brown. Serve immediately.
Makes 1 serving.

15 Minute Superfood Shrimp Scampi

Prepare 1 serving angel hair pasta according to package instructions, which takes about 10 minutes (including the time it takes to boil the water).
While pasta is cooking, heat olive oil in a frying pan and cook shrimp seasoned with a pinch of salt for 3 to 5 minutes over medium-high heat.
Remove shrimp and add olives, parsley, and garlic.
Cook 1 minute and add baby spinach, cherry tomatoes, chicken broth, and white wine.
Cover and cook 3 minutes.
Stir in shrimp and serve with pasta.

Popsicles

Mix ingredients together and pour into molds; place into freezer.
When mixture is slushy, but not solid, place a stick in center.
Freeze solid.
Yields 1 serving.

Shirley Temple

Fill highball or old fashion glass with ice cubes and ginger ale or 7-Up.
Add grenadine.

Hot Rum Lemonade(Yields 1 Serving)

Combine all ingredients in 2 cup glass measure or in ceramic or glass mug.
Heat in microwave on High for 1 to 1 1/2 minutes or until warmed.
Do not boil.

Quesadilla(1 Serving)

Heat oil in a nonstick skillet; add 1 tortilla. Layer with half the Cheddar cheese, all of the chicken and mushrooms and half the Monterey Jack cheese. Top with the second tortilla. Cover and heat until cheese melts and bottom tortilla is crisp and golden brown. Turn over; sprinkle remaining cheese on top. Cook until bottom tortilla is crisp and golden brown and cheese is melted. Cut into wedges; serve with sour cream and salsa, if desired.

Potato Puffie Omelet(Makes 1 Serving)

Mix eggs, potato and yogurt very gently.
Allow to stand for 1 to 2 minutes.
Coat nonstick skillet with vegetable cooking spray. Pour in egg mix and top with veggies.
Cook over low heat until nearly set and lightly browned on the bottom.
Turn and cook another minute or two.

Warm Scallop-Rice Salad(Makes 1 Serving)

In 1-quart microwavable casserole, combine leek, pepper and garlic.
Cover and microwave on High for 2 minutes, until leek is tender.
Add rice and 3/4 cup water and stir to combine. Microwave uncovered on High for 5 minutes, stirring once halfway through cooking.
Cover and microwave on Medium for 3 minutes. Add scallops.
Cover and microwave on Medium for 3 minutes.
Let stand for 1 minute until scallops are opaque.
Add remaining ingredients and stir to combine.
Serve over greens, if desired.

Egg Nog(1 Serving)

Place all ingredients in electric blender.
Mix for 1 minute. Garnish with nutmeg.

Grand Central Oyster Pan Roast(A New York Recipe, For 1 Serving)

Combine oysters with their liquor (juices), clam juice, 1 tablespoon of the butter, chili sauce, Worcestershire sauce and celery salt in top of double boiler over boiling water.
Whisk vigorously (without hurting oysters) for 1 minute until the oysters' petticoats begin to ruffle (edges start to curl).
Add cream.
Stir over boiling water for 1 minute more.
Place toast in wide soup bowl.
Pour pan roast over toast.
Dot with remaining tablespoon of butter.
Sprinkle with paprika.
Serve immediately.

Chicken In Foil(Portions Are For 1 Serving)

On a 12-inch square of heavy-duty foil, place chicken in center.
Top with vegetables, pepper, tarragon and lemon juice. Wrap tight, place on baking sheet.
Cook 1 hour at 350\u00b0.

Low-Fat 1 Serving Lasagna Casserole

Cut strip of cooked lasagna into 3 pieces.
Alternately add the following ingredients in layers in a 10 ounce casserole: 1 tablespoon spaghetti sauce, one piece lasagna, bits of cheese and cottage cheese and green pepper.
Continue this procedure, ending with the sauce.
Save a few pieces of cheese to top the mixture. Bake at 350\u00b0 for about 30 minutes.

Bacon-Flavored Dip Mix(Yield: 1 Serving)

Combine all ingredients in a small bowl; blend well.
Spoon mixture onto a 6-inch square of aluminum foil and fold to make airtight.
Label as Bacon-Flavored Dip Mix.
Store in a cool, dry place and use within 6 months.
Makes 1 package (about 3 tablespoons) of mix.

Cut English muffin in half.
