Potato Puffie Omelet(Makes 1 Serving) - cooking recipe

Ingredients
    2 eggs, well beaten
    1/2 c. nonfat plain yogurt
    1/4 tsp. onion powder
    1/4 tsp. garlic powder
    salt to taste
    1 c. instant potato flakes or granules
    1/4 tsp. lemon pepper
    1/2 c. raw veggies (be daring!)
Preparation
    Mix eggs, potato and yogurt very gently.
    Allow to stand for 1 to 2 minutes.
    Coat nonstick skillet with vegetable cooking spray. Pour in egg mix and top with veggies.
    Cook over low heat until nearly set and lightly browned on the bottom.
    Turn and cook another minute or two.
