Begin by removing casings from sausage. Place in frying pan with 1 tsp. olive oil and 1/2 tsp. fresh garlic. cook until done. Place in food processor until chopped to desire consistency. In a mixing bowl, combine cheeses, eggs, spices, and sausage. Using a knife, stuff manicotti shells with mixture. Layer a 13 oz. baking dish with pasta sauce. Lay shells in dish and cover with additional pasta sauce. Add a splash of water over the top of the dish. Bake at 350\u00b0 for 60 minutes or until pasta shells are soft.
