Soft Molasses Drop Cookies

Cream butter and sugar until light and fluffy.
Add eggs and vanilla and beat well.
Combine soda and molasses and add to creamed mixture.
Gradually stir in flour, then add raisins.
Drop by teaspoonfuls onto greased baking sheets and bake at 350\u00b0 for 8 minutes or until browned.
Makes 6 dozen cookies.

*For a lighter color and flavor, substitute 1/2 cup cane syrup for the molasses.

Soft Molasses Spice Cookies

Mix dry ingredients in a bowl.
In a separate larger bowl, cream butter.
Add sugar and egg. Beat well.
In a small bowl or measuring cup, mix molasses and water. Add to butter mixture.
Gradually add flour mixture.
Chill dough for 1/2 hour.
Roll teaspoonfuls of dough into balls, then roll in sugar.
Place on ungreased cookie sheet.
Bake for 14-20 minutes, depending on size & desired softness.
(I made 48 smaller cookies and baked for 14 minutes on stone pan, nice & soft yet still done).

Drop by teaspoon.
Bake 8 to 10 minutes at 375\u00b0 to 400\u00b0.
Makes about 5 dozen 2 1/2-inch cookies.

Cream together shortening and sugar.
Beat in egg.
Stir in molasses.
Sift together flour, soda, ginger, cinnamon, cloves and salt.
Add alternately with coffee to creamed mixture, mixing thoroughly.
Stir in anise and coriander.

Pour boiling water over raisins; set aside.
Cream sugar and butter.
Add molasses.
Add beaten egg.
Add soda and cold water to mixture.
Add flour, cinnamon and drained raisins.

Oatmeal Molasses Drop Cookies

Preheat oven to 400\u00b0F.
Beat shortening, sugar, eggs, and molasses thoroughly.
Stir dry ingredients (flour-cinnamon) together and blend into wet ingredients.
Stir in oats, raisins and chocolate chips.
Drop dough by rounded teaspoonfuls about 2 inches apart on a lightly greased baking sheet.
Bake 8-10 minutes or until lightly browned.
Note: When I used a 1 1/2-inch wide cookie scoop, I got 3 1/2 dozen cookies.

Boil lard or shortening and molasses.
When cool, add remaining ingredients.
Add flour to make a stiff dough, little stiffer than cake and drop on cookie sheet.
