Combine 2 1/2 c water and groats in a large sauce pan; bring to a boil.

Place a lettuce leaf over 3 slices of buttered toast.

Top with 2 thinly sliced tomatoes.

Add tomato sauce and bring to a simmer for about 20-30 minutes.
Add all your seafood and simmer for 15 minutes longer. Add salt and pepper to taste.

Chop the boiled eggs up and add to mixing bowl. Some like a rough chop where you can still tell it is an egg, some like it chopped, mashed and looking like little pebbles. Your choice -- tastes the same.
Dice the two celery ribs and add to the mixing bowl with the chopped egg.
Add the mayo, yellow mustard, paprika, salt and pepper to the mixing bowl.

Pecans -- In a small dry saute pan, add the pecans and bring to medium heat and toast for just a couple of minutes. Don't let them burn, they literally take, 1-2 minutes. Remove and set to the side.
Salad -- Just add all the ingredients in a medium size bowl and toss well to combine. Garnish with the chopped celery leaves.

Put stock in medium sized pot and bring to a rapid boil.
Add the carrots and the celery to the pot.
Boil for about 10 to 12 minutes or until the carrots are tender.
Scoop out the veggies and serve. Most of the liquid will be boiled away so you can simple discard that but if I am serving plain rice I will often spoon it over the top since it is tasty and there isn't much of it.

In a saucepan saute onion and celery in butter on medium for about 5 minutes until onion is soft. Mix next four ingredients in small bowl and add to onion mixture. Heat and stir for about 1 minute until fragrant.
