To prepare the fries, heat the oil in a

Sprinkle on the garlic, thyme and seasoned salt. Mix

On a baking sheet, toss together, olive oil, garlic, and seasoning. Arrange fries in a single layer.
Broil 6 inches from heat source for 5 to 6 minutes.

Pre-heat oven to 375 degrees.
Scrub potatoes clean -leave skin on. Slice into thirds lengthwise. Lay flat and then cut into 1/2 inch strips. Place potatoes on baking sheet; toss with the 2 tablespoons vegetable oil. Arrange in single layer.
Bake for about 45 minutes or until tender and slightly golden.
While fries are baking; mix together the garlic, parsley salt, pepper, and olive oil.
Remove fries from oven and place in a large bowl.
Add the garlic mixture and toss, coating all the fries.
Cook pasta. Rinse and cool down. Set aside. Toss in red chile flakes and cilantro.
Wash cucumber. Slice diagonally into 1/4\" thick slices. Slice into strips. Set aside.
Heat wok thoroughly, add oil, then minced garlic. Stir fry briefly. Do not burn garlic or it will take on an acrid smell and taste. (If this happens, throw it out and start over.).
Add sugar and vinegar.
Add noodle to wok, stirring and tossing to mix until noodle is heated through.
Place on plates and surround with cucumber strips.
Preheat oven to 450\u00b0F Coat a large rimmed baking sheet with nonstick spray. Toss potatoes with 2 1/2 tablespoons oil in a large bowl and season with salt and pepper. Arrange in a single layer on baking sheet.
Roast the potatoes, turning occasionally, until browned and tender, about 30 minutes. Increase heat to 500\u00b0F Continue roasting until fries are deep brown in spots, about 5 more minutes.
Whisk remaining 1/2 tablespoons oil, garlic, and parsley in a large bowl. Add hot fries, season with salt and pepper, and toss to coat.
