Ernesto'S Mexican Food Carnitas

Heat oil to medium temperature. Place all ingredients in oil except sugar. Cook on medium temperature for 2 1/2 to 3 1/2 hours.
Take sugar and caramelize in small pan over medium heat almost to burn.
Turn meat mixture heat to high and add caramelized sugar, stir and cook for an additional 15 minutes.
Drain meat thoroughly.
Serve with pico de gallo salsa, fresh homemade tortillas, frijoles and margaritas.

Brown and drain hamburger.
Add tomato sauce, soup and taco seasoning to the hamburger and stir to a boil.
Line bottom of 9 x 13 in. baking dish with broken tortilla chips.
Sprinkle a thin layer of cheese over bottom.
Pour meat mixture over cheese. Cover with another layer of chips and remaining cheese.
Bake at 350 degrees approx. 20 min. or until cheese is melted.

Mix two recipes of Can't Fail Pie Crust.
Fill unbaked pie shell with sliced apples.
In a bowl, mix sugar, cinnamon and flour.
Pour evenly over the apples.
Then sprinkle vanilla over the mixture.
Then cut up margarine or butter over the top.
Cover with top crust and, with knife, make slits for air.
Bake at 400\u00b0 for 15 minutes and at 350\u00b0 for 45 to 50 minutes.

Bake chicken at 350\u00b0 until done.
Cut into narrow strips. Heat oil and briefly dip tortillas to soften; drain.
Layer all ingredients in a glass lasagne pan as follows:
5 tortillas, 1/4 of chicken, 1/4 of vegetables, 1/4 of Mexican tomatoes and 1/4 of each of the cheeses.
Repeat for 3 more layers; top with cheese. Bake at 350\u00b0 for 45 minutes.
Let rest for 10 minutes before cutting.
Garnish with fresh basil or cilantro leaves, if desired. Serves 4 to 6.

Teresa'S Mexican Lasagna

Preheat oven to 350*
Brown ground beef and drain any grease.
Over low heat return ground beef back to skillet and add the nacho cheese soup, the soup can of salsa,( and the corn or refried beans if desired).
Blend well and remove from heat.
In a 2 quart round casserole dish , spread a little of your hamburger mixture.
Next lay a flour tortilla, then a little more of your hamburger mix.
Repeat layers ending with your sauce on top.
Top with 1 cup of mexican cheese blend.
Cover with aluminum foil and bake for 30 minutes.
