Add jalapeno pepper with small amount of hominy liquid. Cook over low heat until zucchini is tender and flavors are blended (about 10 minutes).

Mix well with hominy and grated cheese. Pour in casserole and bake at 350\u00b0 for 20 minutes or until cheese melts.
In a skillet, saute onion until soft (5 minutes), then add garlic and saute for another minute.
