Zucchini With Hominy - cooking recipe

Ingredients
    2 medium zucchini, cut into 1/2-inch cubes
    2 or 3 green onions with tops, sliced
    1/2 bell pepper, chopped
    1 Tbsp. (or to suit taste) jalapeno pepper, chopped
    1 (16 oz.) can hominy, drained (save liquid)
    1/2 c. shredded Mozzarella cheese
    salt, if needed
Preparation
    In small amount of oil, saute zucchini, green onion and bell pepper.
    Add jalapeno pepper with small amount of hominy liquid. Cook over low heat until zucchini is tender and flavors are blended (about 10 minutes).
    Add salt if needed.
    Turn off heat. Sprinkle cheese over top.
    Let it melt, then serve.
