Whisk together the ingredients for Sweet Ginger Scallion sauce in the bowl. Set aside for 10 -15 minutes for the flavors to develop.

Sweet potato casserole directions:
Mix
Mix all of the ingredients in a baking dish.
(I add nuts in the mixtures too.)
Sprinkle brown sugar, 1 cup chopped nuts and 3/4 stick melted butter over top.

This is a great recipe for those who don't like sweet potatoes.
For sweet potaotes:.
Preheat oven to 425degrees F.
Wash sweet potatoes (I
ling-film & allow to stand for 8-10 minutes.

Peel sweet potatoes and cut into bite
Combine all casserole ingredients in a 2-quart casserole dish.
Crumble topping over the top of the potatoes.

I always double the topping due to everybody wants the topping with the sweet potatoes.
If you do this, just double the recipe for the topping.
I usually cut the butter to 3/4 cup instead of 1 cup.
