Cook rice in medium saucepan of boiling water until tender; drain.

Add undrained tomatoes, paste and stock; bring to a boil. Reduce heat; simmer, covered, 10 minutes. Uncover; simmer about 10 minutes or until mixture thickens slightly. Stir in beans.
Serve rice and chilli con carne topped with yogurt. Sprinkle with parsley.
Assemble the Nachos on individual plates. Try to distribute the ingredients evenly, in little pockets, throughout the nachos including the cheese but reserving some to sprinkle on top.
Microwave for 2 minutes making sure the cheese is melted and top with guacamole and sour cream.
Eat with your hands and get really messy. Fantastic!

Mix Saute Garlic and Onions, Chili Con Carne
Melt margarine in a large skillet.
Add ground chuck with salt and pepper; brown while stirring.
Add chili con carne with beans, tomatoes and onion.
Cook until done or simmer until ready to eat. Eat with soda crackers.
Heat can of chili con carne to almost a boil.
Melt Philadelphia cream cheese.
Mix thoroughly.
Pour into bowl and serve as a dip.

Heat the oil in a saucepan and brown the ground beef. Add the onion, garlic, tomatoes and peppers and fry for 3 minutes. Add 1 cup water and stir in the chili con carne mix. Bring to the boil and simmer over a low heat for 5 minutes, stirring occasionally.
Add the kidney beans and sweet corn and season with salt and black pepper. Garnish with parsley and serve with warm tortillas.
Heat 1 tbsp of the oil in a large saucepan on medium heat. Add spices; cook 1 min, until aromatic.
Reduce heat to low. Add meat sauce and kidney beans. Cook 5-10 mins, until heated through. Stir in chocolate, if desired. Season to taste.
Meanwhile, for the rice, cook rice according to package directions. Heat remaining 1 tbsp olive oil in a large skillet on medium heat. Saute peppers 3-5 mins, until tender. Remove from heat. Stir in rice and chives. Season to taste.
Serve chili con carne with rice and tortilla chips.
Sweat the onion, garlic, chilli and thyme in 2 tablespoons
Mix meat, quick oats, milk and seasonings.
Allowing 1/4 cup for each patty, shape into balls and flatten.
Slice onions. Place meat patties and onion slices on
a greased grill or in a greased skillet. Brush with melted margarine.
Broil 4 to 5 minutes. Turn and cook the other side the same way. Split and toast rolls. Place 1 meat patty, topped with onion slice, in each roll and spoon 2 tablespoons chile con carne over it.
Makes 25 sandwiches.

Add the kidney beans, sweet corn, tomatoes, parsley, cilantro and chili pepper. Bring to a boil. Reduce heat and simmer for 5 mins. Season to taste. Serve with potato wedges, if desired.
