Pound the chilis and garlic together in a mortar with a pestle. Add the bean and lightly crush. Add the tomatoes, sugar, roasted peanuts, dried shrimp, lime juice, lime wedges, and fish sauce to the mortar and gently mix together until the sugar has dissolved.

In skillet, melt butter.
Add carrots, onion, celery, and spices.

Bring the two cartons of broth to a boil and then reduce to med-high heat.
Add the cubed turkey and let it cook, stirring often. Add the spices now so it can infuse the broth better.
