Prune Punch Cake

Mix all of the ingredients and pour into prepared pan.
Bake at 350\u00b0 until done. Remove cake from oven and top with 2 teaspoons sugar

Put on top of cake while warm.

In large mixing bowl, beat eggs.
Beat in oil, sugar, pumpkin and prune juice.
In another bowl, combine flour, baking powder, baking soda and spices.
Add to pumpkin mix and stir until just blended.
Fold in prunes and nuts.
Evenly turn half batter into each of 2 loaf pans.
Bake at 350\u00b0 for 60 to 70 minutes or until toothpick inserted in center comes out clean.
Cool in pans on rack 10 minutes. Turn out of pans and let cool.
Slice to serve. Makes 2 loaves.

Orange Raspberry Loaf Cake

Preheat oven to 350\u00b0F. Grease an 8x5 inch loaf pan. Line base and long sides with parchment paper, extending paper 2 inches over sides.
Beat cake mix, eggs, milk and orange zest until combined. Beat for another 3 mins then stir in frozen raspberries. Transfer to prepared pan and bake for 55 mins, or until a skewer inserted in the center comes out clean. Let cake cool in pan for 10 mins then transfer to a wire rack to cool completely.

Peaches And Cream Trifle

Prepare pudding mix according to package directions. In a bowl, toss together peaches, preserves, mint and orange juice. Stir almond extract into whipped topping. Stir 1 cup whipped topping into pudding.
In the bottom of a 16-cup capacity trifle bowl, arrange 2 cups diced loaf cake. Top with 1/2 the peach mixture. Spread 2 cups pudding mixture over top. Repeat with cake, peaches and pudding mixture. Spread or pipe top with remaining whipped topping.

Then drain one large can of crushed pineapple and spread all over top of pudding.
Then top pineapples with Cool Whip (1 tub).
Sprinkle with 2 cups of coconut and sprinkle chopped finely chopped pecans as decoration.
Can be frozen.

Pour batter into greased 9 x 5 x 3-inch loaf pan.
Bake at 350\u00b0 for 65 minutes or until cake tests done.
Cool cake.
Drizzle glaze over cake.
