Season beef roast and pork loin with the salt and pepper. Place seasoned beef and pork in a slow cooker.
Set slow cooker to Low. Cover, and cook overnight or 8 to 10 hours. Drain the juices and shred the meat into strands. Return the meat to the slow cooker; pour the enchilada sauce and green chiles in with the shredded meat and cook on Low another 4 to 8 hours.

Place pork roast in a large slow cooker; drizzle with olive oil. Sprinkle in herbes de Provence; season with salt and black pepper to taste.
Mix rice, onion, apples, cranberries, 1 teaspoon salt, and 1/4 teaspoon black pepper together in a large bowl. Spoon rice mixture over and around pork.
Cover and cook on High for 6 hours or on Low for 8 to 10 hours.
Place pork in the slow cooker, and sprinkle it with the salt, vinegar, garlic powder, and liquid smoke.
Cover and set on HIGH for 6 hours.
Remove pork, and place into a large dish; reserve all the liquid into a container, and set aside.
Shred the pork with 2 forks, and put it back into the slow cooker along with about 3/4 cup of the reserved liquid and the BBQ sauce.
Cook on HIGH for 1 more hour.
Place roast in slow cooker, rub all over with the minced garlic.
Add remaining ingrdients and cook on low for 7-9 hours.
Pork should be aobut 160 degrees when fully cooked.
Serves 4-6 people.
Goes great with rice and side salad.
In a medium bowl, stir together the cranberry sauce, salad dressing, and onion. Place pork in a slow cooker, and cover with the sauce mixture.
Cover, and cook on High for 4 hours, or on Low for 8 hours. Pork is done when the internal temperature has reached 145 degrees F (63 degrees C).

/2-inch slits in pork roast using a sharp knife. Slice

Pierce pork loin in several places with long
Season for Pork Loin: Combine garlic salt, garlic-pepper and lemon-pepper. Rub over roast.
Place on a rack in a shallow roasting pan. Bake uncovered at 325 for 1 1/2 to 2 hrs or until thermometer reads 160.
Basting sauce: in a large saucepan, combine all ingredients and bring to a boil. Reduce heat and let simmer, uncovered, for 10 minutes. Brush over roast while baking.
When roast is done cooking, let it sit for 10 minutes before slicing.
