A nut-sprinkled cream cheese icing is the perfect foil for this moist, not-too-sweet carrot cake.
Combine oil, sugar and eggs. Beat at medium speed for 3 minutes. Add vanilla. Combine dry ingredients (flour, soda, salt and cinnamon); add to mixture. Fold in chopped pecans and apples. Bake in tube pan at 325\u00b0 for 1 hour and 20 minutes or until cake is done (check with a toothpick that pulls out clean from the cake).
Heat oven to 350\u00b0F.
Peel sweet potatoes and chop into one inch cubes.
Melt butter and honey together in the microwave or on the stovetop.
Stir spices, salt and lemon juice into butter mixture.
Place sweet potatoes in a casserole dish.
Pour butter mixture over sweet potatoes and stir to coat well.
Bake for about 1 hour, until sweet potatoes are soft. Stirring occasionally.
Once sweet potatoes are done, sprinkle almonds over the top before serving.
Roast Yams/Sweet potatoes @ 375 for 45 minute.
Peel Bananas and quarter.
Roast Bananas in greased pan @ 375 10 minute.
Scoop out Yams from skins.

whip Yam/Potato mixture until creamy.
Grate Zest of lime over top of mixture.

Use your favorite white cake recipe or use 1 white cake mix and bake according to instructions in 9 x 13-inch cake pan.
Let cool 10 to 15 minutes.
Poke holes in the cake with a toothpick, fork tines, etc.

Bake 2 plain, then add raisins, nut meats, cinnamon and cloves.
When cool stick with filling.
