Tallulah Caboose Fresh Apple Cake - cooking recipe
Ingredients

1 1/4 c. cooking oil (I use canola)
2 c. sugar
3 eggs
2 tsp. vanilla
3 c. plain flour
1 tsp. baking soda
1 tsp. salt
3/4 tsp. cinnamon
1 c. chopped pecans
3 medium apples, peeled and diced fairly small (I use Rome apples; they are not too sweet or tart)
Preparation

Combine oil, sugar and eggs. Beat at medium speed for 3 minutes. Add vanilla. Combine dry ingredients (flour, soda, salt and cinnamon); add to mixture. Fold in chopped pecans and apples. Bake in tube pan at 325\u00b0 for 1 hour and 20 minutes or until cake is done (check with a toothpick that pulls out clean from the cake).
