For the omelette, heat 1/2 tbsp oil in a wok over high heat. Add eggs, swirling to coat base of pan. Cook for 1-2 mins, until just set. Flip over and cook for another 30 seconds. Remove from pan. Roll up and slice.
Add remaining oil to wok. Stir-fry snow peas, carrot, garlic and chili for 1-2 mins, until tender. Add duck, noodle sauce, soy sauce and oyster sauce. Stir-fry for 2-3 mins, until heated through. Serve topped with green onions and egg rolls.

Easy Tomato Sauce:
Place tomatoes in
Saute in a large frying pan until onions are clear.
Add seasonings to taste.
(I use Old Bay.)
When liquid has formed from juice of tomatoes, add to mixture one package of Lipton noodle sauce (I use sour cream and chives).
Simmer 7 minutes, stirring gently.
For more color, add a small jar of pimientos.
Cook pasta,drain.
Add oil to wok.
Add mutton or beef; cook until pink.
Add potato.
Add green onion.
Add tomato.
Add red pepper flakes and anise.
Mix crushed ginger in water; add to meat.
Add soy sauce.
Add peppers and garlic.
Add cilantro.
Top on noodles.( i just add my just cooked noodles to sauce and they soaked up some of the juice ).

Crumble ground beef in large skillet with small amount of grease.
Add chopped onion and cook until meat is browned thoroughly.

Pour over 1 pound of cooked spaghetti and mix.

Place the tofu, marinara sauce, and spices in a blender.
Blend until smooth and creamy.
Begin to boil the water to cook the pasta.
Pour the sauce from the blender into a saucepan and gently warm until it's heated through.
When the pasta is still a touch crunchy, pour the frozen peas in with the boiling pasta.
When pasta and peas are cooked, drain and mix with your warm sauce.
Top with shredded parmesan.

Pound the chilis and garlic together in a mortar with a pestle. Add the bean and lightly crush. Add the tomatoes, sugar, roasted peanuts, dried shrimp, lime juice, lime wedges, and fish sauce to the mortar and gently mix together until the sugar has dissolved.
Add the papaya and mix together. Serve.
