Quick Pasta For One

Cook your pasta in the usual way.
The amount depends on how hungry you are.
In a small heavy pan (or very carefully in a light one) heat the oil with the garlic the black pepper and the salt.

Turn off the heat and let it stand until the pasta is cooked.

Courgette Fritters

Add the egg to the grated courgette and mix.

There are two versions here, one a European one with added herbs: fresh Oregano, and one an Indian one with added spices: ground cumin and coriander.
The resultant mixture is then spooned into a frying pan with hot oil, flattened out into 3 or four small fritters and gently fried on both sides.

Mango Jalapeno Jam

place chiles, manoes and lemon juice in a pot.
Combine pectin with 1/4 cup sugar in a small bowl. Add to fruit.
Bring to a full boil, one that cannot be stirred down, stirring occasionally.
Add the rest of the sugar and return to boil for one more minute.
Remove from heat. Remove any foam.
Ladle into hot prepared jars, leaving 1/4 inch at the top. Wipe and process in hot water bath using good canning procedures.

Broccoli And Cauliflower Salad

Break cauliflower and broccoli into flowerets, using as much of stems as desired.
Chop or cut small onion.
Mix remaining ingredients well and toss with cauliflower and broccoli.
Will serve 8 or more.
For one person or a small number, halve recipe for dressing and add to vegetables as desired.

One Pot Chicken Dinner

Salt and pepper chicken.
(Can be cut up if in a hurry, leave whole if not.)
Put all ingredients into a covered casserole dish and bake at 350\u00b0 for 1 1/2 hours.
It makes its own juice so do not add liquid.
Serve with a salad.

Barbecue Grill Potatoes

Cut potato into 4 slices. Place slices on square of aluminum foil (to wrap and bake potato in). Place oleo or butter on the slices with chicken bouillon sprinkled generously over that. Wrap aluminum foil around the potato and place in coals of barbecue for one hour.

Pasta With Crab For One Person

Cook pasta according to packet directions, drain set aside and keep warm.
Melt the butter in a nonstick frying pan over medium heat and add leek and garlic, and cook for 3-4 minutes or until leek is soft.
Add zucchini and cook for 2 mins longer.
Add pasta, crab meat and lime juice and black pepper to taste and cook for 3-4 mins until heated through.
Remove from heat and stir in sour cream or yoghart and serve immediately.
Sprinkle with parmesan cheese and serve with crusty bread if desired.

Roasted Eggplant For Pasta And Recipes

Place eggplant cubes on a plate and sprinkle with salt then let them sit for 30 minutes to remove bitterness. Rinse off the cubes in a collander then pat them dry with a paper towel.
Preheat oven to 425 degrees F.
Place eggplant cubes onto a nonstick baking sheet and drizzle the oil over them.
Grind the fresh pepper over the eggplant to give them all a light dusting.
Sprinkle the just under 1 tsp salt over the cubes.
Sprinkle the garlic powder over the cubes.
Bake for 30 minutes, give it a stir midway thru.

Stuffed Pork Chop For One Person

Cut pocket in pork chop.
Add broth or water to dressing mix. Cook in microwave oven less than 1 minute.
Add grated apple and stuff pork chop.
Bake at 350\u00b0 for 30 to 45 minutes or until tender.
Can be cooked in an electric skillet on medium heat.

Sherry Beef Casserole Dish

Add jar of mushroom and parsley, if so desired, makes it much better.
Put all ingredients together and stir in a casserole or crock-pot.
Cover and cook at 325\u00b0 for 3 hours.
Be sure container is large enough so it doesn't run over.
Great over large egg noodles or mashed potatoes as a main dish.

Zucchini Omelet(For One Person.)

Cut zucchini in half.
Boil for 10 minutes or until done.
In a small bowl, beat egg with milk.
Add parsley and seasonings. Beat again.
Add cooked zucchini.
Cook in a nonstick skillet over moderate heat until almost done.
Top with cheese.
Fold over.

Fish Marinade For People Who Hate Fish

Whisk all ingredients together and pour over whichever fish you choose. I put the fish and marinade in a Ziplock and store it in the fridge.
Leave to marinate for one hour.
Cook fish however you prefer but baking is great.

Hamburger For One Person

To make patty, place beef, breadcrumbs, onion, herbs, egg yolk, tomato and soy sauces and black pepper in bowl and mix well to combine.
Using wet hands shape mixture into a patty.
Heat oil in a nonstick pan over medium high heat, add patty and cook for 4-5 minutes each side to your liking.
To assemble hamburger sprinkle bottom half of bun with cheese, then top with cooked patty, tomato sauce, beetroot, tomato, lettuce and top half of bun.
