Place olive oil in a large soup pot.
Add garlic and simmer about one minute, do not let it brown.
Put tomatoes in blender and blend briefly to smooth out the tomatoes.
Then add to garlic.
Cut Italian ham in chunks.
When I order this from the Deli, I have them cut it in 1/2 lb slab.
Add basil and crushed red pepper flakes.
Let simmer about 6 hours.
I always check the richness of the sauce by putting a spoonful in a clean bowl, let it sit for about 5 minutes and if water is seperating from the sauce, continue to simmer.

Tomato Sandwich From Italy

Cut loaf of Italian bread in half crosswise.

Cut fish into large pieces.
Scrub clams; remove shells from shrimp.
Heat oil in 3 or 4-quart casserole with a cover.
Add onions, garlic and chopped tomatoes.
Saute 10 minutes.
Add 1 cup wine and simmer 10 minutes.
Add fish and 1/2 bottle wine.
Add Italian seasoning, basil and bay leaf.
Cover and simmer 45 minutes.
Fish will break up and thicken soup.
If too thick, add rest of bottle of wine.
If too thin, add 1 tablespoon tomato paste.

Grandmother Louise'S Italian Spaghetti Sauce

Fry sausage until well browned and cooked through.
Remove sausage; fry tomato paste in sausage drippings.
Fry until dark. Add garlic, oregano and bay leaf.
Simmer for a few minutes.
Add canned tomatoes; stir well, then add sausage.
Simmer for 2 to 3 hours, or as long as you like.
This recipe comes from Northern Italy.

Sunny Italy Dressing

1 oz of the creamy Italian dressing to the mixture in

Basic Italian Sauce(With Meat)

In large saucepot, heat oil.
Add garlic and sliced onion and saute.
Add tomato puree plus 1 can of water, tomato paste and 1 can of water.
Mix. Add salt and pepper.
Sprinkle in all spices, cheese, Angostura Bitters and Worcestershire.
Stir all together. Brown the sausage and meatballs (see recipes in meat section).
Add to the sauce.
Allow to simmer for 2 to 2 1/2 hours, stirring occasionally, or until sauce is slightly thickened and meat is cooked.
Add more of spices, if needed.
May be doubled or tripled.

Italian Herb Pork Chops With Roasted Red Pepper Italian Dressing

Medium heat large skillet with olive oil.
Sprinkle each pork chop evenly with seasonings.
Sear on both sides.
Turn fire down and let pork chops cook covered until done on both sides.
After pork chops are drained on both side, put on a plate and cove with dressing.
Cook your favorite brand of garlic butter rice following directions on package.

Place a 4-5 quart Dutch oven over medium high heat. Add the olive oil, onion, green pepper, zucchini and salt. Mix well. Cook for 6-8 minutes, stirring often, until just heated through. Add the garlic and Italian seasoning. Mix well. Add the Ragu sauce, beef broth, garbanzo beans, black beans and diced tomatoes. Mix well and bring to a simmer. Add the pasta and cook until pasta is al dente. Add the sausage and meatballs. Mix well and bring to a simmer to heat through.
Top each individual serving with grated Parmesan cheese, if desired.

Italian Turkey Meatballs

In large mixing bowl, mix all ingredients except the Italian bread crumbs.
Note: If you substitute beef or pork, delete 1 tblsp. vegetable oil.
Form into 2 inch meat balls.
For more intense Italian flavor, roll each meatball in the Italian bread crumbs.This is optional. If you are going to put the meatballs in sauce or soup do not roll in the crumbs.
Place on a baking pan that is non-stick.
Preheat oven 375*.
Cook on the middle rack for 30 - 35 minutes.
Makes 25 to 30 meatballs.
