Dumplings

How To Make The Perfect Red Sauce

Pour the olive oil into a 12 inch skillet and heat on low heat. Add the diced onion and saute' until the onions are slightly golden. In the meantime, crush the canned tomatoes with your hands until smooth and then add them to the skillet. Cook 10 to 15 minutes. Salt and pepper to taste. Then chop the basil leaves and add them to the sauce. Add crushed pepper flakes if you want to make it more spicy, or eggplant or zucchini. I like to add about 4 cloves minced garlic in with the onion at the beginning for added flavor.

French Bread

Dissolve yeast in 1/2 cup warm water and let stand 10 minutes. Add to very warm water the shortening, sugar and salt.
Add enough flour to make stiff dough.
Let stand 10 minutes, then work down 5 times 5 minutes apart.
Divide dough into 2 parts.
Roll each out flat and then roll like jelly roll.
Cut diagonally 4 or 5 times across top.
Put in French bread pan or on a cookie sheet and let stand to raise 1 1/2 hours.
Bake at 400\u00b0 for 30 minutes or until light brown.

How To Make An Ice Ring

Make out into rolls and let rise again. Bake at 400\u00b0 for 15 to 20 minutes.
These rolls freeze well.
Bake until slightly colored, cool and freeze.

Peanut Butter Balls

Mix peanut butter, oleo and salt well.
Mix in powdered sugar to make stiff dough.
Chill 2 hours.
Make into balls and place on a cookie sheet.
Chill again.
Melt the chocolate chips and paraffin.
Dip balls with a toothpick into melted chocolate. Place on wax paper or cookie sheet.

Sugar Cookies

Dissolve soda and cream of tartar in milk.
Cream butter, shortening, sugar and eggs together.
Add to milk mixture.
Sift about 4 cups of flour and start working this into the wet mixture. Use only enough flour to make soft dough.
Refrigerate dough overnight.
Roll out very thin and cut into cookies.
Bake at 400\u00b0 until brown.
Watch carefully.

Indian Bread

Mix milk, 2 cups flour, baking powder and salt, then add enough flour to make soft dough.
Roll out and cut in strips.
Fry in deep, hot fat until golden brown.
Drain on paper towels. Sprinkle with confectioners sugar and eat while still hot (or can dip \"sticks\" into warm honey or syrup as you eat).

Potato Dumplings

Make vegetable soup.
Put in potatoes and cook until potatoes are done.
Remove potatoes and mash.
Add egg, milk and flour enough to make stiff dough.
Drop by spoonfuls into soup and steam for 5 minutes, or until dumplings are done.
They will rise to top when done.

Herring Dumplings

Grind potatoes, herring and onions.
Add wheat hearts or oatmeal, thyme, pepper and baking powder.
Add flour enough to make stiff dough so balls hold their shape.
Drop dumplings into boiling water to which vinegar has been added.
Cook1/2 to 3/4 hour.
Cubes of salt pork may be put in center of balls.
Serve with melted bacon fat and fried bacon, or melted butter.
