Preheat an oven to 350\u00b0F
Place bacon in a single layer on a cooling rack placed on a baking pan. Bake for 20-25 minutes until the bacon is very crisp and starting to look overcooked.
Remove from oven and place cooked strips on a paper towel; press all the grease out.
Break into chunks and place into food processor; whirl until nearly a paste.
Add remaining ingredients and continue to process until fully incorporated.
Store in covered jar in refrigerator.
Mix dry, then rub on. Use about half rubbed in.
Let stand a week, then rub on remainder.
Let stand another week.
Rub the third time and let stand until all is thoroughly absorbed. Just the black pepper will show.
Hang and smoke.
Use green alder. When half done, use a little green myrtle wood (native to Oregon) part of the day only, for a delightful flavor.
Don't overdo!
Too much will make bacon and hams bitter.
Finish smoking process with green alder.

Combine ground beef, meat cure mix, ground pepper, red pepper, mustard seed, garlic powder and liquid smoke.
Mix well and chill 8 hours or overnight.
Shape meat mixture into five 5 x 3-inch logs. Wrap logs individually in cheesecloth; tie ends with string.
Place on rack in a shallow baking pan; bake 6 hours in a gas oven at 200\u00b0.
Chill 8 hours and store in refrigerator.
