Preheat oven to 400 degrees.
Stir milk, Eggbeaters, and applesauce together in a small bowl, then stir in oatmeal. Let mixture sit for 45 minutes to 1 hour.
In a medium bowl, mix dry ingredients together. Add raisins and stir to coat.
Add oat mixture to dry ingredients and stir just until combined.
Spray muffin pan with non-stick cooking spray, then fill 9 cups level with batter.
Bake at 400 degrees for 20 - 22 minutes.

Heat oven to 375 degrees.
Mix brown sugar, butter, vanilla, and egg in a large bowl. Stir in remaining ingredients.
Drop by rounded teaspoonfuls about 2 inches apart onto lightly greased cookie sheet.
Bake till brown, 8 to 10 minute About 3 dozen.
Note :Oatmeal Crisp Cereal With Almonds can be substituted.

Heat oven to 375. Mix raisins, milk, lemon juice, and rind in a saucepan; heat until bubbly. Set aside. In a large bowl, cream butter sugar, and vanilla; add dry ingredients. Add oats and nuts. Spread half of the oat mixture in a greased 9 x 13 inch pan. Pour raisin mixture over top and cover with remaining oat mixture. Bake 25 minutes or until light golden brown. Slice into bars when cool.
