Put water in a large kettle or Dutch oven.
Add Hearty Soup Mix and salt.
Bring to a boil.
Cover and simmer 1 to 1 1/2 hours.
Add carrots, celery, cabbage, tomato sauce and vegetable juice cocktail.
Add cooked ground beef or other meat, if desired. Simmer 20 more minutes, until vegetables are cooked.
Makes 6 to 8 servings.
In medium skillet, fry bacon over low heat until crisp. Remove with slotted spoon and drain completely on paper towels. In small bowl, beat together oil, vinegar, mustard, salt and pepper; set aside.
Place lettuce, tomatoes, cheese and bacon in salad bowl.
Pour on dressing and toss gently.
Prepare soup according to package directions.
Remove to serving bowls and serve with salad.

In large saucepan, brown ground beef; drain off excess fat. Cut up tomatoes slightly.
Add beef, along with mixed vegetables, water, onion soup mix, salt and pepper.

In a pot of 3-4 quarts, saute garlic in vegetable oil in low heat. Before it turns brown, add onion, turn up the heat and saute for 2 more minutes.
Add all the diced vegetables.
Add water to cover all vegetables and more water to 2 inches above the vegetables. (Vegetables give water while cooking so don't put in too much water if you want a really hearty soup).
Add all the seasonings. Simmer for 2-3 hours. (I use a no-heat thermal pot and let sit for 12 hours. If you simmer with heat, remember to add water as necessary).
