Combine the potatoes, celery, onion, ham and water in a stockpot
Spread thinly sliced ham with 1/4 inch of cream cheese.
Take 1 whole green onion, washed, dried and ready to eat and hold it lengthwise of ham.
Trim
onion to fit ham and roll up the onion lengthwise in ham to form a ham roll.
Make as many as you wish; refrigerate until ready to serve.
Cut ham rolls in about 1/2 to 1-inch pieces.
One ham roll equals about 8 pieces.
Refrigerated ham rolls last up to 1 week if wrapped in foil.

The next morning, after I rinse the beans, I just throw everything in the crockpot, put in enough water to come within an inch of the top of the crock and put it on low for 8 hours or as long as 12 hours. This usually works great in my 3.5 qt crockpot. Rethinking this, I realized that everyone doesn't have the same size crockpot that i did, I would suggest adding water to no higher than an inch above the beans.

Turn crock pot on low and cook all day (at least 8 hours).

Eat, or freeze, then nuke 'em for convenience! Look in the freezer section of the grocery store for more hot pockets to clone at home!
Heat oil in a large saucepan over medium-high heat. Add ham, onion and garlic and cook 3 minutes, until onion is tender.
Add sage and cook 1 minute, until sage is fragrant.
Add broth and beans and bring to a simmer. Reduce heat to medium-low and simmer 10 minutes.
