The recipe requires lemon cordial, not lemons, but for some reason it won't let me put 'lemon cordial' in the ingredients.
Stir 1 cup water, cordial, sugar and vanilla bean seeds over medium heat until sugar dissolves. Bring to a boil then reduce heat and simmer for 10 mins, or until syrup thickens slightly. Transfer to a measuring cup, cover and chill for 1 hour.
Combine fruit in a large serving bowl. Pour syrup over top and toss to combine. Serve.
Put sugar in a large bowl, pour boiling water over it and stir to disvole.
Add lemon both the fruit and rind the citric acid and flowers.
Leave for 24 hours stirring occasionally.
Sieve through muslin or a very fine sieve.
Pour into bottle.
Pour passionfruit pulp into a bowl with the citric acid & stir to combine.
Put water 7 sugar into a saucepan & simmer over a low heat until suagr dissolves, bring to the boil & simmer for 5 minutes.
Remove syrup from heat & allow to cool slightly, pour it over the passionfruit pulp & stir until combined. Pour into sterilised bottles & refrigerate.
NB/If you don't want seeds in your cordial, strain the pulp but bear in mind you'll likely need to increase the amount of passionfruits used to make up 1 cup pulp.
Slice the passionfruit in half and spoon the pulp into a mixing bowl.
Add the vanilla, caster sugar and lemon juice and stir to combine.
Pour the cordial into a clip-lock bottle and refrigerate until required.

It is especially good with veal, lamb, poultry, potatoes and tomatoes.
