NOTE: My recipe for the diabetic sweetened condensed milk makes 1 cup. Make as much as you need and store the extra in the fridge in a covered dish. Also, if you are on a VERY strict diabetic diet, use only 1/2 of the chips.
Mix the pudding mix, milk, and sweetened condensed milk and blend well.
Fold in the whipped topping, bananas, and white chocolate chips.
Refrigerate overnight. Serve in individual serving cups. Garnish with white chocolate chips and vanilla wafers.

Add vanilla.
Gradually add flour mixture, blending well.
Roll out cookie dough; cut into shapes or put through a cookie press.
Bake on ungreased cookie sheet at 400\u00b0 for 8 minutes, or until edges are brown.
Makes about 5 dozen cookies.

Orange Cloud(Diabetic Recipe)

Prepare gelatin according to package directions, substituting ginger ale for cold water.
Pour 1 cup gelatin in metal bowl; divide remaining gelatin among four 4-ounce glasses.
Chill bowl and glasses 1 hour.
Set 8 orange segments aside; divide remaining segments between glasses.
Using spoon, poke into gelatin.
Whisk 1/2 cup yogurt into gelatin in bowl until well blended.
Pour over gelatin layer in glasses.
Chill until set, about 1 1/2 hours. Garnish with reserved orange segments and the remaining yogurt.

Diabetic Strawberry Pie

Mix pudding, gelatin and water in saucepan; stir over medium heat until mixture comes to a full boil.
Remove from heat.
Cool in refrigerator until slightly thickened.
Arrange strawberries in pie shell.
Pour mixture over berries. Chill until set.
Serve with whipped topping.
Garnish with strawberries.

Frozen Fruit Cups(Diabetic Recipe)

Beat cream cheese, sour cream, Equal and lemon juice in medium bowl until smooth; gently mix in fruit. Spoon
mixture into 12 paper-lined muffin cups or spread in baking dish, 10 x 6-inches. Garnish with pecan halves and additional fruit, if desired. Freeze until firm, 6 to 8 hours. Let stand at room temperature until slightly softened, 10 to 15 minutes, before serving.

Elswet'S Diabetic Cinnamon Raisin Bread [ 4 Bread Machine ]

Place ingredients in bread machine pan in order given, but sprinkle the raisins around the ingredients against the wall, and make a deep indentation in the center of the flour and measure in the yeast.
Bake this on the basic cycle. It comes out beautifully on the medium crust setting. This recipe makes a 2 pound loaf.
For nutritional values to be right, slice loaf in half, lay halves down, and slice into 3/8\" slices. You should get approximately13 slices per half. A serving is 1 slice.

Peel off paper; cut and eat. Makes 3 pops.
One pop equals 1/3 fruit.

Chocolate Raspberry Cheesecake(Diabetic Recipe)

Pour milk into blender container.
Add cottage cheese and fruit spread.
Cover; blend until smooth.
Add pudding mix. Cover; blend until smooth.
Pour pudding mixture into large bowl; gently stir in whipped topping.
Pour into 8-inch pie plate; smooth top.
Sprinkle with chocolate.
Freeze until firm, 6 hours or overnight.
Remove cheesecake from freezer about 15 minutes before serving.
Let stand at room temperature to soften slightly. Serves 8.

Preheat oven to 375\u00b0.
Place tuna in a medium bowl.
Combine milk, water and soup in separate bowl.
Add to tuna and stir well. Add peas, water chestnuts, half of noodles, plus tomato, celery, green onions and soy sauce.
Toss lightly to mix.
Spray 1 1/2-quart casserole with cooking spray.
Pour/spoon mixture into casserole and then top with remaining noodles.
Bake for 25 to 30 minutes or microwave for 8 minutes or until thoroughly heated. Makes 8 servings.
