Combine bread crumbs, flour and salt.

Add the cheeses to the beaten egg.

Eggplant Dip

Peel, cut and cube the eggplant; leave soaking in water with salt for 15 minutes.
Saute in pan 1/2 of the garlic in olive oil. Drain eggplant well and add to garlic.
Cook until eggplant is soft.
Dissolve the flour in 1/2 cup water, then add to eggplant. Stir until thickens.
Mash with fork.
Add the other 1/2 of garlic, salt and mayonnaise.
Serve with onion pita bread.

Meanwhile, in small skillet, heat oil until hot.
Add onion and garlic and saute until transparent.
Set aside.

Peel off skin and take out seeds.
Place eggplant pulp, onion and garlic into food processor and puree.
Add salt, cumin, pepper, yogurt and lemon juice.
Puree.
Chill.
Add chopped tomato and garnish with fresh parsley.
Serve on warm pita bread triangles.
Makes 4 cups.

Salt eggplant; dip in milk.
Coat in flour.
Brush with salad oil.
Cook in hot oven on cookie sheet until golden.
In dish, layer eggplant slices, tomato sauce and Mozzarella.
Sprinkle top with Parmesan.
Bake at 350\u00b0 for 25 minutes.
