Preheat the oven to 180\u00b0C/350F.
Mix everything together adding the egg last.
Roll into balls and flatten with a fork on a baking tray lined with greaseproof paper leaving enough room for cookies to expand, you may have to do this in 2 batches.
Bake for 8-10 minutes checking after 5 to make sure cookies do not burn.
Allow to cool on the tray, then serve.

1/4 cup sugar can be used instead of the honey.

For the Healthy Hollandaise:
Combine all the

Pound the chilis and garlic together in a mortar with a pestle. Add the bean and lightly crush. Add the tomatoes, sugar, roasted peanuts, dried shrimp, lime juice, lime wedges, and fish sauce to the mortar and gently mix together until the sugar has dissolved.
Add the papaya and mix together. Serve.
