Pound the chilis and garlic together in a mortar with a pestle. Add the bean and lightly crush. Add the tomatoes, sugar, roasted peanuts, dried shrimp, lime juice, lime wedges, and fish sauce to the mortar and gently mix together until the sugar has dissolved.
Add the papaya and mix together. Serve.

Place the chocolate bits in blender and pour the very hot coffee over the bits. Cover blender and run on high speed for 10 seconds (or until chocolate is melted and mixture is smooth).
Add egg yolks and vanilla. Cover again and blend on high speed for 5 seconds more.
In blender combine all ingredients.
Mix on highest speed on blender for 1 to 2 minutes.
Pour into custard dishes coated with vegetable oil.
Sprinkle tops of custard with cinnamon and nutmeg. Place custard dishes in hollow pan of hot water about 1 inch deep.
Bake at 350\u00b0 for about 50 to 60 minutes.
Serve with Cool Whip.
