Peel the sweet potatoes and cut them into 1.5\" chunks.
Drain one can of pineapple.

Set crock pot to high for an hour or until you leave, then set to low for 8-10 hours.

If you are going to use uncooked sausage, brown on the stove top, and drain before adding to the crockpot.
Otherwise, line your 4 quart sized crock pot with a slow cooker liner, dump ingredients into the crock, and stir well.
Cover and cook on low for 3 1/2 to 4 hours, or until the orange vegetable is tender.
STIR once during the cooking time. I have not made this on high but am guessing an hour with more frequent stirring.

Stir together in crock pot the tomatoes, cumin, & pumpkin pie spice.
Peel sweet potatoes and chop into bite size chunks, add to crock pot.
Peel and dice red onion, add to crock pot, stir all together.
Cover and cook for 4 &1/2 to 5 hours on high.
About 1/2 hour before serving, stir in the peanut butter well, and add the chopped ham, cover & continue to cook.
When ready to serve, added fresh chopped parsley and stir.
