Prepare macaroni according to package instructions; drain. Combine pepperoni, zucchini, cucumber, tomato, radishes and carrots.

Place the potatoes into a pot and fill with enough water to cover. Bring to a boil, then reduce the heat to medium and simmer until tender, about 10 minutes. Drain and cool.

Cook the potatoes in salted, boiling water for 8-10 mins, until tender. Refresh under cold water.
Mix the oil, vinegar and onion together and season. Mix the potatoes and dressing together.
Place the eggs in a pan with water, bring to a boil over medium heat. Once the water has boiled remove pan from the heat. Let eggs sit in the water for 12 mins. Refresh the eggs under cold water and peel then dice. Mix the eggs, potatoes, lettuce, trout and salad dressing together then serve.

Note: When preparing this salad, I added 3 cups of chicken or turkey, since I like more meat in mine. You can also substitute a mild cheddar cheese for the colby. I think Kraft's Creamy Cucumber Salad Dressing, makes this macaroni salad taste best, but you can use a regular ranch salad dressing.
