Fried Chicken:
In a shallow baking
time, dip chicken pieces into egg mixture, then into flour mixture
Mix flour, crumbs, pepper and seasoning in Ziploc bag and shake to mix.
Mix eggs and milk in large bowl.
Wash chicken and towel dry.
Place in Ziploc with flour mixture; shake.
Take out of Ziploc and place chicken in milk/egg mixture, shake and then replace in flour mixture and shake again.
Heat shortening in large skillet, high heat until melted, then place chicken in shortening.
Lower heat to approximately 350\u00b0 and cook approximately 45 minutes or until golden brown.
For Dressing: Whisk together ingredients, refrigerate.
For Chicken: Cut chicken into 1\" strips. Whisk eggs with 1/4 cup water. Whisk flour with salt and pepper. Heat oil in skillet to 350. Dip chicken strips in eggs mixture, then coat with flour mixture. Fry 3-4 minutes until done. Season while hot.
For salad: slice tomatoes and toss with greens and onion slices. Top with fried chicken strips and dressing.
