Cover pinto beans with water in a large bowl. Soak beans for 4 hours
Mix first 4 ingredients then add chopped onion & green pepper.

Meanwhile bring to a boil (stirring constantly) vinegar, oil & sugar.
pour hot mixture over beans.
refrigerate at lwast 2 hours (overnight is better).

Rinse beans. Cover with water and boil for 15 minutes. Then start over with fresh water and let come to a boil. Saute onions and garlic until wilted and add to beans. Cook for 1 hour and 45 minutes on medium heat. Add salt and pepper. Add Tabasco sauce and bacon and cook 15 minutes or until done.
Cook bacon & onion together in large pot. Do not add oil.
When bacon and onion are almost done, stir in garlic. Do not drain bacon grease!
Add can of rotel with juice. Stir all together.
Add pinto beans, seasoning to taste, and water to cover the beans. I just pour the seasoning in and stir until the water turns orangey-red.
Cook on low until ready to serve.

I also make this in a crockpot and simmer it all day, nobody will ever know the difference!
In a large pot add pinto beans, and fill with water.
Sort and wash pinto beans.
Cover with water.
Bring to a boil; turn off heat.
Let soak 1 hour.
Add hamburger meat (raw) to beans; cook over medium heat.
Add all other seasonings to taste.

Mix together the lemon juice, soy sauce and water and set aside.
Heat a large skillet and add the olive oil. Stir in the curry until mixed.
Add the rice and mix well. Stir in the pinto beans.
Add the lemon juice mixture, combine well.

Spray a 1 1/2-quart casserole dish with cooking spray.
Cook bacon until just crisp, pat with paper towels, and crumble. Reserve 2 tablespoons of bacon grease.
In reserved bacon grease, saute onion and garlic until tender, about 10 minutes.
