Authentic Filipino Chicken Adobo

Into a medium large saucepan, put 2 cups of water, chicken (or tofu--see note), onion, garlic, soy sauce, vinegar, cooking wine, and sugar.
Bring it to a boil.
Add the spices and simmer 5 minutes.
Add the vegetables and cook until tender.
Thicken the sauce with the cornstarch mixture.
Serve with steamed rice.

Filipino Vegetable Adobo

Wash and sort spinach or greens.
Separate leaves and cut stems into 1-inch lengths.
Saute garlic in oil, and when it is golden brown, add the spinach or greens, lemon or lime juice, soy sauce and salt.
Cover and bring to a boil. Add freshly ground pepper to taste. Serve hot with sticky rice.

This serves about 13-15 people. Saute the chicken, garlic, and onion until browned. Add the rest of the ingredients and cook on medium heat until it has a stew consistency. (Or becomes stew-like)
Note: you may want to try the vinegar and soy sauce a little at time until you get the right flavor.
Then serve hot, over rice.

Authentic Filipino Champorado

Mix all ingredients together (except milk) in a large pan. Cover.
Put on high heat until boiling for 3 minutes. Mix.
Put on low heat for 30-40 minutes (still covered). Mix often to prevent sticking. Add more water of you want it more thin.
Serve hot with a swirl (or a cup!) of evaporated milk on top! Enjoy!

Virgin Island Authentic Cruzan Recipes

Filipino Chicken Soup

Chop the chicken into pieces.
Put into a pot with the crushed ginger.
Cook, uncovered, until the liquid has evaporated.
Brown chicken slightly and add to the patis and enough water to cover the chicken.
Bring to a boil, then simmer until the chicken is tender.
If you need more soup, add a can of chicken broth.
Add the vegetables of your choice.
Add the long rice for the last 10 minutes.

Brown the pork pieces with garlic.

Filipino Poorman'S Steak (Bistek A La Pobre)

Pat the beef dry.
Marinate beef in soy sauce,1 teaspoon of sugar, lemon juice, fish sauce,garlic, pepper and oil (to lock the moisture in meat) for 30 minutes to an hour.
Put the pan in high heat, heat oil till smoking hot and stir-fry beef along with the marinade until cooked and tender. This takes about 5 minutes.
