We grill ours slowly over coals is best, but gas is fine. We will be smoking it this summer too.
Preheat oven to 500\u00b0.
Trim and season Tri-Tip.
Place on a rack in a pan.
Cook at 500\u00b0 for 15 to 20 minutes.
Shut oven off and let Tri-Tip set in oven for 45 minutes.
Don't open oven door until 45 minutes are up.
Liberally sprinkle tri-tip with Pappy's seasoning.
Pierce with fork.
Pour beer over tri-tip.
Place in plastic bag and seal for 1 hour.
Remove and barbecue for approximately 45 minutes at 140\u00b0.
Baste often with marinade.
