Saute chopped shallots in olive oil until they soften and begin to caramelize; do not burn.

Grease an ovenproof casserole; add mashed sweet potatoes.
Top with miniature marshmallows, just to cover top of the potato mixture.

Orange-Baked Sweet Potatoes:
Peel sweet potatoes and chop into pieces

Scrub the sweet potatoes clean. Pat dry and prick
Wash the yams/sweet potatoes and pat dry with a paper towel.
