Using a heavy pan with a tight-fitting lid, bring 2 cups of chicken stock to a boil. Stir in couscous, turn off heat, put the lid on the pan and let it sit for five minutes without lifting the lid.
While couscous cooks, thinly slice the green onions and measure 1/2 cup finely grated Parmesan cheese.
After 5 minutes, remove lid and fluff the couscous with a fork. Let cool for 2-3 minutes.
Stir in green onions and finely-grated Parmesan. Season to taste with freshly-ground black pepper and serve hot.
Boil couscous in six cups of water; cover, remove from heat, and let stand for 20 to 30 minutes; chill uncovered.
For vinaigrette, place all items, except oil and baby corn, in food processor and drizzle in oil while blending.
Or, finely chop ingredients by hand and blend with a wire whisk.
Mix couscous, baby corn, vinaigrette, and all other ingredients; chill overnight.

Steam the peas without water if they're still frozen. I prefer the young, tender peas. Drain the peas in a sieve after cooking.
Drain, put into food processor, and add the mint, parsley and salt.
Depending on the consistency of the pea puree, add 1 to 2 tablespoons of fresh cream, or more if you like.
