DAY ONE: All fruits except bananas
Cover cucumbers with boiling water for 3 days.
Take cucumbers out and boil fresh water.
If cucumbers become soft, discontinue. On fourth day, peel
and slice.
Heat vinegar, sugar, salt and pickling spice.
Add sliced cucumbers.
On the fifth and sixth day, drain.
Heat brine to boiling, then add cucumbers.
On seventh day, heat brine, add cucumbers and heat through.
Put a little alum in jar.
Seal.

In a large pot, saute garlic in oil for 2 minutes.
Add tomatoes in juice and tomato paste.
Cook over medium heat, stirring and breaking up tomatoes; let cook for about 10 minutes.

Cook at least 30 minutes over low heat.
Add oregano and parsley; Stir well.
Simmer 10 minutes more.
Serve over pasta.

Pour the liquid off of the pickles. Discard. These will make their own juice.
Add the garlic, sugar and Tabasco.
Turn over once a day for seven days. I start these upside down on the jar lid. They may be good by the second or third day. Sometimes ours are all gone by the seventh day. Keep these refrigerated.
Fill a gallon jar with the sliced cucumbers and onions.
Mix with the remaining ingredients.
Put in refrigerator.
Shake every day for 6 days.
Ready to eat on the seventh day.
