Baked Vegetarian Enchiladas

Grease 2 9x13 baking dishes.
Combine beans, corn, salsa, tofu, and salt, mixing thoroughly.

Place the seam side in the baking dish.
Pour enchilada sauce over enchiladas (I only used 1 1/2 cans).

If desired, garnish each enchilada with a dollop of sour cream.

Vegetarian Taco "Meat"

In a large skillet over medium heat, add meatless ground burger, water and spices.
Mix well and let simmer for 10-15 minutes until heated through and water is absorbed.
Use this mixture to replace the seasoned ground beef in any of your favorite Mexican recipes!
Another note* One can use 1 cup of TVP in place of the soy crumbles or Boca. You might need a bit more that 1 cup of water to keep mixture from getting too dry.

Vegetarian Chicken

Mix all except gluten flour and cooking spray in blender(I used food processor) until smooth.
Quickly mix the liquid/bean mixture with the flour until smooth like bread dough(I make into smooth round disc shape).
Place on a baking sheet sprayed with cooking spray and bake in a 350*F oven 35-45 minutes until golden brown.
Let cool, then cut or pull apart into small pieces and put in food processor and pulse until texture is like chopped or shredded chicken, or cut in strips or cubes to use for other dishes.

Tacos: For Vegetarians And Non-Vegetarians

Brown ground beef in skillet and drain.
Stir in taco seasoning mix and 1 cup water.
Bring to a boil, reduce heat and simmer, uncovered and stirring occasionally for 15 to 20 minutes.
While beef mixture is simmering, combine 1/4 cup of salsa into the refried beans (may skip this step if you prefer).
Heat beans in small saucepan.
Arrange beef, beans and remaining ingredients in serving dishes and platters.
Allow diners to assemble tacos as desired.
